Scrumptious Breakfast Bars
Ingredients:
1 cup honey
1/3 cup coconut oil
1 cup mixed nuts and seeds (cashew, pecan, almond, walnut, pumpkin, sunflower)
1 cup shredded coconut (optional)
¾ cup pitted medjool dates chopped
¾ cup cranberry paste
1 tsp vanilla
2 tsp cinnamon
Directions:
Preheat oven to 350 degrees. Line 8×8 cake pan with parchment paper and grease with coconut oil. Heat honey and coconut oil in saucepan, stirring until combined. Turn off heat and add the remaining ingredients. Mix well making sure everything is evenly coated. Pour mixture into prepared pan. Bake for 30 minutes. Take out pan and place in refrigerator to set. Once bars are cool, cut into bars and store in-between parchment paper sheets in airtight containers. Keep in refrigerator.
