Savory Autumn Omelette

I need to go to the grocery store in a bad way! So, this morning I was trying to figure out what in the world I was going to make. I didn’t want the same old eggs over easy with greens. I wanted something savory and flavorful….something new!

Well, let me tell you! After combing through my fridge, I came up with one of the best omlettes I have had (sans cheese). This is a must try for all of you (and I hope it is all of you) breakfast lovers!

 

SAVORY AUTUMN OMLETTE

1/4 cup sweet onion chopped

1 tbsp butter or ghee (clarified butter)

1 strip turkey or regular bacon

1/2 clove garlic

2 eggs

1 tbsp heavy cream or coconut milk (organic if possible)

1/2 cup of winter squash chopped (butternut, acorn, I used buttercup for this one)

1 tsp Thyme

Sea salt to tast

Heat the skillet with the butter/ghee and add the onions and garlic. Saute for 1 minute and add squash. Let the onions, garlic and squash saute for about 2 minutes, stirring occasionally. Add in the turkey/regular bacon. While bacon is cooking, whisk eggs in a seperate bowl with cream, thyme and a pince of sea salt. Once bacon is cooked and the squash is slightly browned, pour in the egg mixture making sure it covers all of the squash and bacon. Turn the burner down, cover with lid and allow omlette to cook slowly. This should take about 3-5 minutes. There is no need to flip this omlette.

**I didn’t add cheese to this (because I didn’t have any) but a really good raw bleau or swiss cheese would be an amazing addition!
