Sneaky Ways to Add More Greens to Your Diet
Everyone knows they need to eat more vegetables, especially greens. However, most people, including myself can struggle to find creative ways to increase green intake aside from the same old salad.
The below tips and recipes are especially useful if you or someone in your household is a picky eater and the sight of something green immediately turns them off.
CHOCOLATE BANANA SHAKE
No green is coming through the malt glass with this recipe! Using frozen bananas, unsweetened cocoa, a few dates and vanilla extract make this recipe a perfect hiding spot for spinach and celery. No one will even know they are slurping on a “green smoothie”.
ARUG-AMOLE
Take your classic guacamole and amp it up! Chopping up arugula along with cilantro can make your chunky guacamole packed with phytonutrients. If you prefer it creamy, simply combine all the ingredients in your food processor and blend until you reach the texture you prefer.
BLACK BEAN ZUCCHINI BROWNIES
You will be shocked at how decadent these babies are and contain a whole zucchini! Gluten, dairy and egg-free, these brownies make a wonderful substitute for the kitchen classic. Try not to eat the whole pan before sharing it with your family.
SUPER GREEN PESTO
I have fooled my husband with this recipe, and even myself! One of the simplest yet delicious sauces you can make at home. Throw a couple of large handfuls of spinach and/or arugula into the food processor with garlic, lemon juice, walnuts, pine nuts, olive oil and sea salt along with a heaping amount of basil. Toss in some nutritional yeast if you are doing dairy-free and blend for a few minutes. Use on to top grilled chicken, eggs or make it a super green meal by adding it to zucchini noodles for a low-carb pasta night.
