Roasted Red Pepper Sauce

Ingredients

1 roasted red pepper or jar of roasted red peppers drained

1/4 cup olive oil

1/4 cup onion chopped

2 cloves of garlic minced

1 tbsp fresh parsley

1 tbsp dried basil or 1/2 cup fresh

1/2 lemon juiced

1/2 cup nut milk (optional – will make it more of a cream sauce)

Sea Salt

Black Pepper

1.     Combine all of the ingredients into a food processor or blender.

2.     Blend on high until smooth. Can serve hot or cold over zucchini or sweet potato noodles, veggies, meat or with crudités.
