Morning Veggie Scramble

Veggies of your choice (mushroom, peppers, onion, tomatoes, spinach, garlic, zucchini)

2 eggs

1 oz. cheese of your choice (raw cheddar, feta, bleu, or goat cheese)

Butter or Coconut oil

Sautee vegetables in frying pan with butter/coconut oil.  While veggies are cooking, whisk two eggs in a bowl.  Once veggies are soft, pour egg mixture into the skillet making sure to mix vegetables in with eggs.  Turn heat down to lower setting.  Flip the mixture around making sure eggs are cooked thoroughly.  Turn off burner and add cheese on top to melt.
