Don’t let the gluten free label scare you away from these flapjacks. They are amazingly satisfying and lip-smacking good!
Glorious Gluten Free Pancakes
2 tblspn coconut oil or butter
1/3 cup coconut milk/almond milk/hemp milk
¼ tsp vanilla extract
1/8 tsp baking powder
¼ tsp cinnamon (optional)
1/8 tsp salt
3 tblspn coconut flour
1 tsp. Stevia or 1 tblspn honey
Blend together eggs, oil, coconut milk, Stevia/honey, vanilla extract and salt. Combine coconut flour, baking powder with cinnamon and slowly mix into batter. Heat 1 tblspn butter or coconut oil onto skillet. Spoon batter onto hot skillet making pancakes into whatever size desired. For me, that means two big pancakes!!
Serve with your choice of maple syrup, coconut butter, butter, chopped walnuts or fresh fruit.
