1-2 medium sweet potatoes
- Scrub sweet potatoes under water and peel sweet potato.
- Using a spiralizer or vegetable peeler (will make more fettuccine-sized noodles), make raw sweet potato noodles.
- Either sauté on their own or add your choice of fresh vegetables to stir fry with the noodles. For a crunchier texture, sauté the veggies and add the sweet potato noodles last. Cook until tender but not mushy.
- Season with sea salt and black pepper or top with your favorite sauce (pesto, roasted red pepper, curry sauce or marinara).
