Sweet Potato Noodles


1-2 medium  sweet potatoes

Olive Oil

Sea Salt

Black Pepper


  1. Scrub sweet potatoes under water and peel sweet potato.
  2. Using a spiralizer or vegetable peeler (will make more fettuccine-sized noodles), make raw sweet potato noodles.
  3. Either sauté on their own or add your choice of fresh vegetables to stir fry with the noodles. For a crunchier texture, sauté the veggies and add the sweet potato noodles last. Cook until tender but not mushy.
  4. Season with sea salt and black pepper or top with your favorite sauce (pesto, roasted red pepper, curry sauce or marinara).
