 Scrumptious Breakfast Bars


1 cup honey

1/3 cup coconut oil

1 cup mixed nuts and seeds (cashew, pecan, almond, walnut, pumpkin, sunflower)

1 cup shredded coconut (optional)

¾ cup pitted medjool dates chopped

¾ cup cranberry paste

1 tsp vanilla

2 tsp cinnamon


Preheat oven to 350 degrees. Line 8×8 cake pan with parchment paper and grease with coconut oil.  Heat honey and coconut oil in saucepan, stirring until combined.  Turn off heat and add the remaining ingredients.  Mix well making sure everything is evenly coated.  Pour mixture into prepared pan.  Bake for 30 minutes.  Take out pan and place in refrigerator to set.  Once bars are cool, cut into bars and store in-between parchment paper sheets in airtight containers.  Keep in refrigerator.

    I am looking for an alternative to eggs and this recipe sounds delish! but what are the protein and carbs counts? I am concerned I’ll be hungry again or ready for a nap a few hours after eating one of these bars for breakfast…seems like a jolt of sugar, no?

      Teri- these bars are not only packed with protein but also healthy fat and fiber. That is the perfect trifecta for a satisfying meal that won’t get you hungry in a few hours. The sugar is natural sugar that is backed with fiber and healthy fat so no worries of a sugar rush. Have them with my homemade coconut milk to make it a satisfying breakfast!
