Goat Cheese Stuffed Dates


¾ cup goat cheese

1 tbsp minced shallots

1 tbsp chopped fresh/dried thyme

24 whole pitted medjool dates

6 thin proscuitto slices (optional)


Preheat oven to 350degrees.  Combine goat cheese, shallots, and thyme in a bowl.  Slice dates lengthwise but not all the way through.  Open dates and place 1 tsp cheese mixture inside.  If using proscuitto, slice in half lengthwise and then crosswise making four equal pieces.  Wrap each date with one proscuitto piece and place on lined baking sheet.  Bake for 8 minutes or until filling is heated. Serve immediately.
