1-2 large cucumbers (leave peel on)
4 oz goat feta
1 cup pitted black olives halved
1/4 cup red onion cut into long slices
Cherry tomatoes or 1 large tomato diced
1/2 cup chopped parsley
1 tbsp Olive oil
1 tbsp Balsamic or Apple Cider Vinegar
- Using a spiralizer or mandolin, make thin noodle-like strands out of the cucumbers.
- Place on a paper towel to absorb the extra moisture.
- In a mixing bowl, combine olive oil, vinegar, sea salt and black pepper to taste.
- Toss with feta cheese, tomatoes, olive, parsley and red onion.
- Serve immediately.
