Cucumber Greek Salad


1-2 large cucumbers (leave peel on)

4 oz goat feta

1 cup pitted black olives halved

1/4 cup red onion cut into long slices

Cherry tomatoes or 1 large tomato diced

1/2 cup chopped parsley

1 tbsp Olive oil

1 tbsp Balsamic or Apple Cider Vinegar

Sea Salt

Black Pepper


  1. Using a spiralizer or mandolin, make thin noodle-like strands out of the cucumbers.
  2. Place on a paper towel to absorb the extra moisture.
  3. In a mixing bowl, combine olive oil, vinegar, sea salt and black pepper to taste.
  4. Toss with feta cheese, tomatoes, olive, parsley and red onion.
  5. Serve immediately.
