Cilantro & Watercress Salad


Delightfully refreshing, you would never guess that this dish is extremely detoxifying to the body. Enjoy on warm summer evenings with some sliced avocado.

CILANTRO AND WATERCRESS SALAD

INGREDIENTS

1 medium carrot thinly sliced

½ cup slivered red onion

1 medium cucumber sliced

½ cup fresh cilantro

3 cups torn dandelion leaves

1 bunch watercress

 

Dressing

2 tbsp fresh lime juice

1 tbsp extra-virgin olive oil

½ tbsp toasted sesame oil

1 tsp raw honey

½ tbsp minced fresh ginger

½ tbsp wheat free tamari

 

DIRECTIONS

  1. Mix watercress, dandelion, carrots, onion, cucumber and cilantro in a large bowl.

  2. In a separate bowl, whisk together dressing ingredients until blended.

  3. Add dressing to salad mixture and toss gently.
