Raw Carrot Cake Balls

3-4 snack size servings

1/2 cup grated carrot

1/2 cup raw walnuts

1/2 cup pitted medjool dates

1/2 cup rolled oats

1 tbsp almond butter

1 tsp cinnamon

Dash of nutmeg

Pinch of sea salt

Directions
  1. Place all of the ingredients in food processor and pulse until mixed thoroughly.
  2. A nice dough-like consistency should be formed.
  3. Roll into small balls and place in the fridge to cool.
  4. Store in the freezer.

    Hi Maria:

    This was an AMAZING recipe!!!! I did not have almond butter on hand, but added a few raw almonds to the food processor. After rolling 1-inch balls, I rolled them in finely shredded, unsweetened organic coconut. It was astonishing how much they tasted like my favorite sweet treat. They turned out so pretty, they looked like they came out of a store truffle box! Thanks for all the healthy alternatives!
