Apple and Beet Slaw


2 Granny Smith apples

2 large beets

1 lemon juiced

1/4 cup Apple Cider Vinegar

1/2 tbsp raw honey

1 tbsp olive oil

Sea salt and black pepper to taste


  1. Make thin noodles using a spiralizer/mandolin or use a box grater to shred apples and beets.
  2. In a small mixing bowl, add the remaining ingredients and whisk together.
  3. Toss with apples and beets until well coated.
  4. Serve right away or allow it to sit and marinate for increased flavor.

OPTIONS: Add on top of burgers or grilled chicken for an added boost of flavor. Top tacos or burritos for some crunch. Mix into your salad for an added boost of veggies.
